Sweet Potato Pie


2 c. cooked, mashed sweet potatoes
1 stick of butter, softened
2 eggs, separated
1 c. packed brown sugar
1/4 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. pumpkin pie spice
1/2 c. evaporated milk
1/4 c. white sugar
1 9-inch unbaked pie crust

Preheat oven to 400 degrees.

In large mixing bowl, combine sweet potatoes, butter, egg yolks, brown sugar, salt, cinnamon, pumpkin pie spice, and evaporated milk. Mix well.

In a smaller bowl, beat egg whites until stiff peaks form; add 1/4 c. sugar and fold into sweet potato mixture.

Pour into pie shell and bake for 10 minutes. Reduce heat to 350 degrees and bake for 30 minutes or until firm. (The middle will firm up as the pie cools.) When the edges of the crust start to brown, cover the edges with foil to keep the crust from burning.
